In full-service restaurants, where the average spend per customer tends to be higher compared to limited-service, consumers are seeking complete experiences from service to elaborate menus. Taking this segment into greater consideration, manufacturers in the food industry are investing in strategies to reach end consumers.
The current scenario of polarisation, wars, economic uncertainties, environmental concerns, and heavy load of information flow make consumers feel more anxious and insecure about the future. In Euromonitor International's Voice of the Consumer: Lifestyles Survey, fielded January to February 2023 (n=1,006), the percentage of Brazilian respondents agreeing with the statement “I will be happier than I am now” had decreased by approximately four percentage points compared to 2019’s survey fielded over the same period (n=1,003).
Fast-paced lifestyles in major Brazilian cities have encouraged consumers to seek more flexible meal options. Brunch offers the convenience of a meal that combines elements of both breakfast and lunch, and also the possibility of having an alcoholic drink, such as the popular mimosa, offering an option for those looking for a more leisurely and relaxed experience compared to a traditional lunch.

Full-Service Restaurants
FSR (full-service restaurants) encompasses all sit-down establishments where the focus is on food rather than on drink. FSR is characterized by table service and a relatively higher quality of food compared to quick-service units. Menus offer multiple selections and may include breakfast, lunch and dinner. Preparation of food products is often complex and involves multiple steps. NOTE: restaurants types catalogued in this segment refer to table-service only (outlets with a proper “full table service:” wait staff attending customers and taking orders at the tables). Outlets with “limited table service” are excluded from FSR. For example: outlets where customers order their food at the counter are excluded (even though the waiter will then bring the food at the table).
