Full-service restaurants is projected to see moderate growth in value and volume terms over the forecast period, while the number of outlets is expected to remain relatively stable. With the pandemic over and signs that inflation is stabilising it is expected that consumers may start to feel more confident about eating at full-service restaurants on a more frequent basis again.
Over the forecast period, it is expected that new catering concepts will gain further ground in Italy such as so-called dark kitchens (kitchens specialising only in home delivery) and ghost kitchens (a laboratory that works for multiple brands and which is dedicated to deliveries). There are also social kitchens where events within the kitchen are the common thread.
Innovation will remain a key tool in attracting the interest and attention of consumers when it comes to full-service restaurants. Innovation in terms of dishes, ingredients as well as in the way the outlets communicate with consumers are all areas that are likely to be explored as players fight for share both with other full-service restaurants but also other areas of foodservice.

Full-Service Restaurants
FSR (full-service restaurants) encompasses all sit-down establishments where the focus is on food rather than on drink. FSR is characterized by table service and a relatively higher quality of food compared to quick-service units. Menus offer multiple selections and may include breakfast, lunch and dinner. Preparation of food products is often complex and involves multiple steps. NOTE: restaurants types catalogued in this segment refer to table-service only (outlets with a proper “full table service:” wait staff attending customers and taking orders at the tables). Outlets with “limited table service” are excluded from FSR. For example: outlets where customers order their food at the counter are excluded (even though the waiter will then bring the food at the table).
