Over the forecast period, full-service restaurants is expected to see moderate growth in current value terms, albeit at a significantly lower level than that likely to be seen in limited-service restaurants or self-service cafeterias, which can offer more affordable dining experiences and benefit from lower overheads. Nevertheless, full-service restaurants will remain an integral part of Austrian culture, and many local consumers will continue to value the ambience and quality of service offered by these establishments.
Consumer interest in Japanese dishes such as sushi and ramen rose sharply in Austria during the review period, and new brand Ramen Makotoya has benefited from this. The brand opened its first restaurant in Austria in 2021 and a further three in 2023.
In contrast to limited-service restaurants, the likelihood of emerging brands opening full-service restaurants over the forecast period will be rare. One exception is Hans im Glück, a German brand which in 2016 opened its first restaurant in Austria in Kufstein (a town of only 17,000 inhabitants close to the German border) and a second restaurant in September 2023 in a top location in Vienna.

Full-Service Restaurants
FSR (full-service restaurants) encompasses all sit-down establishments where the focus is on food rather than on drink. FSR is characterized by table service and a relatively higher quality of food compared to quick-service units. Menus offer multiple selections and may include breakfast, lunch and dinner. Preparation of food products is often complex and involves multiple steps. NOTE: restaurants types catalogued in this segment refer to table-service only (outlets with a proper “full table service:” wait staff attending customers and taking orders at the tables). Outlets with “limited table service” are excluded from FSR. For example: outlets where customers order their food at the counter are excluded (even though the waiter will then bring the food at the table).
