Looking ahead, full-service restaurants is expected to see ongoing growth in both transactions and current value terms, thanks to efforts made by players to improve profitability and attract more customers. However, a weak local economy will hamper expansion plans and investments and may dampen consumer purchasing power for the foreseeable future.
Domestic and foreign tourism is expected to improve over the forecast period, boosting consumption through full-service restaurants. Inbound tourists tend to value the wide variety of both local and international cuisine offered by full-service restaurants, particularly those that also offer high-quality service in ambient surroundings.
Although many players in the category remain cautious about opening new establishments in Peru, there is a noticeable trend for overseas expansion, and this is expected to continue across the forecast period. For example, the renowned Peruvian Chef Gaston Acurio now offers some of his most popular brands in various cities throughout the world, and this has not gone unnoticed amongst other well-known chefs.

Full-Service Restaurants
FSR (full-service restaurants) encompasses all sit-down establishments where the focus is on food rather than on drink. FSR is characterized by table service and a relatively higher quality of food compared to quick-service units. Menus offer multiple selections and may include breakfast, lunch and dinner. Preparation of food products is often complex and involves multiple steps. NOTE: restaurants types catalogued in this segment refer to table-service only (outlets with a proper “full table service:” wait staff attending customers and taking orders at the tables). Outlets with “limited table service” are excluded from FSR. For example: outlets where customers order their food at the counter are excluded (even though the waiter will then bring the food at the table).
